Easy to make and delicious!

Ingredients:

8 oz of mascarpone

3 large eggs

1 cup of espresso

1 tsp of vanilla extract

1/2 cup and a pinch of sugar

2 tbsp of dark rum

2 tbsp of cocoa powder

7 oz package of lady fingers

2 tbsp of milk chocolate shavings (optional)

Directions:

  1. Combine 3 egg yolks, 1 tbsp of espresso, sugar, 1 tsp of vanilla extract and 2 tbsp of rum. Beat for 2-3 minutes or until well combined. Add marscarpone and beat an additional 2-3 minutes until smooth

  2. In another bowl, beat 3 egg whites until they form stiff peaks with a pinch of sugar. Gently fold mixture into the egg yolk mixture.

  3. Dip lady fingers into the espresso and layer in a serving dish, spread mascarpone mixture, repeat process until no lady fingers and cheese mixture remain and refrigerate for at least 6 hours.

  4. When ready to serve, dust cocoa powder on top and shave chocolate.

  5. Enjoy!
