Carrot Ginger Dressing

Carrot Ginger Dressing

Tastes just like it would at a restaurant!

Ingredients:

1/3 cup extra-virgin olive oil

1/3 cup rice vinegar

2 large carrots, peeled and roughly chopped (about ⅔ cup)

2 tbsp peeled and roughly chopped fresh ginger

2 tbsp lime juice

1 tbsp plus 1 teaspoon honey (swap for agave to make the recipe vegan)

1 1/2 teaspoons toasted sesame oil

1/4 teaspoon salt, more to taste
1/4 cup onion

1 tbsp of white miso paste

1 1/2 tbsp white sugar

Directions:

  1. In a blender, combine all of the salad dressing ingredients as listed. You can blend until completely smooth or blend lightly to leave slightly chunky.

  2. Serve over greens of your choice and any other salad ingredients you’d like.
